The Name

doughMarzano’s Wood Fired Italian restaurant derives its name from the San Marzano tomato which is grown on the volcanic plains to the south of Mount Vesuvius. It is the only tomato allowed by Italian law to be used in the production of authentic Neopolitan pizza.


The Pizza

doughWe at Marzano’s pride ourselves on making Certified Neopolitan Pizzas, using authentic methods, equipment and ingredients. Our pizzaiolo (pizza maker) was certified only after an intense regiment of 110 hours of training, under the tutelage of Roberto Caporuscio. Authentic Neopolitan pizza dough contains only four ingridients: water, salt, yeast and flour. A deceptively simple list of ingredients hides a complexity which forces us to make our dough on a daily basis. The imported San Marzano tomato we use for our sauce is so intensely flavorful that we only hand mill it to remove the seeds and spread it gently on the thin pizza dough. The perfectly creamy, mild fresh mozzarella which we make in house is used as a primary topping. The pizza is finished off with some fresh basil leaves which complete the tricolored Italian flag as it was presented to Queen Margherita in 1889. We bake our pizza in a hand built imported Italian oven, which burns at a 1000 degrees to scare the pizza into being cooked in 90 seconds. From that day to this, little has changed in the way of making one of the old world’s most rustic foods.

The Oven

doughToday, the Associazione Pizzaiuoli Napoletani (the Association of Neapolitan Pizza) maintains strict member guidelines for ingredients, dough, and cooking. This elite organization maintains that, only wood-burning, bell-shaped brick ovens are permitted in pizzerias that belong to this organization. The pizza must be cooked on the surface of the oven (often made of volcanic stone), and not in any pan or container, with oven temperatures reaching at least 400-430° C (750-800° F). These ovens often have to heat up for hours before the first pizza is cooked.

The Ambiance

When we decided to place our wood burning, handmade oven from Italy in the center of the restaurant; it inspired us to use only natural materials for the ambiance as well. You will find soft woods and stone combined in earthy tones throughout the dining rooms. While we are a large capacity restaurant the space is broken into more intimate rooms that are inviting to both families and couples.
